stupid mistakes i’ve made along the way + my favorite inclusions


Can I just rant a little today?

I’ve made a lot of mistakes trying to figure out this sourdough baking thing.

Here’s a list of them that happened only this week:

  1. Bought expensive organic bio eco buckwheat flour (when I didn’t have to in the first place), then I spilled half of it all over the kitchen floor.
  2. Did zero research on buckwheat flour and how it doesn't contain gluten.
  3. Didn’t realize using too much buckwheat flour would be a problem (since, again, it has no gluten!!), which resulted in a dense, brick-like loaf (we had to throw it in the trash because it was not even good for croutons or anything else I usually do with my failed experiments).

(Thanks for letting me get that off my chest. I feel much better now.)

But after all this time experimenting and facing one baking disaster after another, I can humbly say that I still have a lot more to learn.

Trying out baking with different flours is great, but also stressful at times. That's why I often rely on inclusions when I want something different, and leave the experiments with different flours for another day.

Inclusions are something I've gotten quite good at (unlike baking with buckwheat flour, haha), so I feel confident about pointing you to a post where I write all about how to add different ones to your favorite sourdough loaf.
