Can I just rant a little today? I’ve made a lot of mistakes trying to figure out this sourdough baking thing. Here’s a list of them that happened only this week:
(Thanks for letting me get that off my chest. I feel much better now.) But after all this time experimenting and facing one baking disaster after another, I can humbly say that I still have a lot more to learn. Trying out baking with different flours is great, but also stressful at times. That's why I often rely on inclusions when I want something different, and leave the experiments with different flours for another day. Inclusions are something I've gotten quite good at (unlike baking with buckwheat flour, haha), so I feel confident about pointing you to a post where I write all about how to add different ones to your favorite sourdough loaf.
